Our Story

Christy and Shannon Fox, co-owners and founders of Bellingham’s Evolve Chocolate + Cafe are both madly passionate about chocolate, local food, and flavors. With just shy 30 years experience under her belt, classically trained Chef Christy and longtime foodie Shannon are very excited about their new endeavor – – Evolve Chocolate + Cafe, on the mezzanine level of historic Fairhaven’s Village Books.

Follow your nose upstairs and you’ll find the two laughing wives and their talented staff busy preparing tasty, locally-sourced food and drink such as Lamb Pita with cucumber, mint yogurt and feta cheese on toasted pita EASY grab-n-go lunch, Chopped Green salad with avocado, cucumber, tomato, shaved salt cured egg & Twin Sisters Whatcom blue cheese, Polenta Bowl with salt roasted beets, goat cheese, house apple-chili gastrique, and the very favorite chocolate “Cake-ettes” - that are completely gluten/dairy free and look GREAT with a birthday candle!
